Allegory's Pisco Sour

Ingredients

  • 2 oz
    Caravedo
  • 0.5 oz
    Lime Juice
  • 0.5 oz
    Lemon Juice
  • 0.5 oz
    Gomme Syrup

    1:1 sugar to water

  • 0.5 oz
    Rich Simple Syrup

    2:1 sugar to water

  • 1 whole
    Egg White
  • 0.5 oz
    Topo Chico

    or preferred soda water

  • 2 dashes
    Aromatic

    Angostura bitters, floated on top as garnish

Instructions

Combine the pisco, lime juice, lemon juice, gomme syrup, and rich simple syrup in a shaker with ice. Shake for about 7 seconds. Strain out the ice, add the soda water to the tin, then reverse dry-shake the cocktail for 10–15 seconds. Fine-strain into a chilled coupe. Finish with a few dashes of Angostura bitters floated over the foam as both garnish and aromatic accent.
