Instructions
Ensure avocado pits are clean and completely dry — scrub away any residual green flesh and allow them to dry thoroughly, either in a warm oven or overnight at room temperature. Transfer the pits to a high-powered blender or Vitamix and blitz until uniformly fine, or use a microplane to grate them by hand. Toast the shredded pits in a dry pan over medium-high heat, stirring constantly until they turn a bright orange color. Combine the toasted pits with the sugar and water in a bowl or saucepan, stirring well to incorporate. For a richer, more concentrated syrup, reduce the water by half. Let the mixture infuse overnight. The following day, return the mixture to the blender and blitz once more to fully combine. Strain through a superbag or fine-mesh strainer before bottling.
