1.5 ozScotch Whisky

1.5 ozBoiling Water

1 tspSugar

1 peelLemon

Instructions
Combine the Scotch and boiling water in a silver-plated mug or tankard and carefully ignite the liquid. While the mixture is still blazing, pour it back and forth between two mugs four or five times, creating an arc of fire with each transfer. Add the sugar and stir briefly to dissolve. Pour into a tumbler and garnish with a lemon peel.

The showstopping Blue Blazer is a deceptively simple combination of Scotch, boiling water, and sugar ignited and dramatically cascaded between two tankards in an arc of flame. A signature feat of 19th-century bartending, it was immortalized by Jerry Thomas in his landmark 1862 cocktail manual.
