Ingredients

  • 1 kg
    Boiling Water
  • 1 kg
    Granulated sugar
  • 1 parts
    Almond/Orgeat-Based

    Day-old croissants from a local café work perfectly — the residual sugar, butter, and oil are the key functional components

  • 3 oz
    White/Light

    Unaged rum, added as a preservative

Instructions

Combine the almond croissants, boiling water, and granulated sugar in a sealed container. Let steep for at least 12 hours, stirring occasionally to encourage extraction. Transfer the mixture to a blender or Vitamix and process until the croissants are fully broken down. Filter the liquid through a superbag or fine-mesh straining cloth, pressing to extract as much liquid as possible. Stir in the unaged rum as a preservative. Store in the refrigerator or a sealed airtight container.
