Instructions
Soak a brown sugar cube with orange bitters in a chilled mixing glass. Add a barspoon of soda water and muddle the mixture into a smooth paste. Add the rye and Jamaican rum along with cracked ice and stir until well-chilled and diluted. Rinse a chilled rocks glass with absinthe, discarding the excess. Strain the cocktail into the prepared glass. Express a lemon twist over the surface and place it on the rim as garnish.
About
A Sazerac-riff from Eric Alperin of The Varnish that pairs rye whiskey and Jamaican rum over a muddled brown sugar and orange bitters base, finished with an absinthe-rinsed glass for an earthy, Cognac-like depth.
