Bitters

Cranberry Wine

Ingredients

  • 33.33 oz
    Water
  • 300 g
    Cranberry
  • 200 g
    Caster Sugar
  • 1 g
    Champagne & Sparkling

Instructions

Dissolve the sugar in room-temperature water. Flash-blend the cranberries and stir them into the sugar water. Let the mixture come fully to room temperature. Activate the Champagne yeast according to package directions, then add it to the cranberry mixture. Transfer to an airlock-fitted container and ferment for 3 to 5 days—it's ready when it tastes dry but before any vinegary notes develop. Strain out the solids, then pour the liquid into a saucepan over low heat and simmer for 2 minutes to cook off the alcohol. Cool before using.

About

A lightly fermented cranberry wine with residual alcohol cooked off, lending fruity body without booze.
