-
3 eachRaspberry
muddled
3 to 4 raspberries
-
0.5 ozSimple Syrup
-
3 ozAmontillado
Instructions
Combine the lemon wedge, raspberries, and simple syrup in a mixing tin and muddle well. Add the amontillado sherry and give the mixture a brief swirl to incorporate. Dump the entire contents of the tin—ice and all—into a chilled Collins glass. Fill the glass three-quarters full with pebble or crushed ice and mix briefly with a bar spoon or metal straw to integrate the ingredients. Garnish with fresh raspberries, an orange slice, and a mint sprig.
About
A refreshing, fruit-forward cobbler built on the nutty depth of amontillado sherry, with muddled raspberries and a squeeze of lemon providing just enough brightness and acidity. This is a nod to the cobbler once served at The Beagle, a pivotal East Village bar in the sherry cocktail revival.
