Instructions

Rinse a chilled coupe with absinthe—either by swirling a small pour and discarding, or using an atomizer—and set aside. Combine the gin, dry vermouth, and maraschino liqueur in a mixing glass with cracked ice. Stir until well-chilled and properly diluted, then strain into the prepared coupe. Express a lemon twist over the surface, run it around the rim, and drop it in as garnish. Finish with a brandied cherry.

About

A classic turn-of-the-20th-century Martini variation that layers gin and dry vermouth with the bright fruit of maraschino and a fragrant absinthe rinse. Eric Alperin's take delivers what he calls a "gentle kiss of fruit and an herbaceous bow-tie finish."
