Garden Syrup

Ingredients

  • 2 tsp
    Fennellys Strawberry

    Heaping, crushed

  • 2 parts
    Mint

    Fresh, 6-inch sprigs

  • 3 parts
    Basil

    Fresh, 6-inch stems

  • 2.25 cups
    Simple

    Granulated sugar

  • 1.5 cups
    Water

    Chilled

  • 0.25 tsp
    Malic Acid

Instructions

Toast the crushed fennel seeds in a dry pan over medium heat until fragrant, then remove from heat. Transfer the seeds to a blender along with the fresh mint sprigs, basil stems, sugar, chilled water, and malic acid powder. Pulse in short bursts until most of the sugar has dissolved—avoid running the blender continuously to prevent bruising the herbs and incorporating excess oxygen. Strain the syrup through a cheesecloth into a bottle. Store refrigerated for up to 2 weeks, noting that the vibrant green color will fade after a few days.
