Instructions
Combine honey, sliced fresh ginger, and water in a small saucepan and bring to a boil. Reduce the heat and simmer for 5 minutes. Remove from heat, cover, and refrigerate overnight to allow the ginger to fully infuse. Strain through a fine-mesh strainer, discarding the solids. Store refrigerated.
