3 quartsSugar
Instructions
Blanch the mint in boiling water for five seconds, then immediately transfer to an ice bath. Bring 2 quarts of water to a boil and dissolve the sugar to create a syrup. Combine the blanched mint with the sugar syrup in a blender and blend until smooth. Strain through a fine chinois.
