Ingredients

  • 2 oz
    Evan Williams Single Barrel Vintage
  • 0.75 oz
    Lemon Juice
  • 0.75 oz
    Simple Syrup

    1:1, sugar:water

  • 1 small
    Egg White

    small egg white

  • 1 spray
    Angostura Aromatic Bitters

    Applied as a spray over the egg white foam

  • 1 whole
    Lemon Twist

    Expressed over the glass and used as garnish

  • 1 whole
    Cherry

    Brandied cherry, for garnish

Instructions

Combine the egg white and lemon juice in one side of a Boston shaker and dry shake vigorously to emulsify. Add the bourbon and simple syrup to the other tin, then combine both halves. Add 5 large ice cubes and shake exactly 20 times. Double strain into a rocks glass over fresh ice. Allow the foam to rise and settle, then spray Angostura bitters across the top of the foam. Express a lemon peel over the glass, then lay it on top alongside a brandied cherry as garnish.
