Peanut-Infused Oloroso Sherry

Ingredients

  • 180 grams
    Raw Peanuts

    gently toasted until golden, then cooled

  • 25 oz
    Lustau Oloroso Don Nuño

Instructions

Gently toast the raw peanuts in a dry pan or oven until golden. Allow them to cool completely. Transfer the cooled peanuts to a vacuum-seal bag, pour in the full bottle of oloroso sherry, and seal. Refrigerate overnight. The following day, strain the infusion through a coffee filter-lined chinois and rebottle. Store in the refrigerator until ready to use.
