Instructions
Combine ripe raspberries with an equal volume of white vinegar and allow to infuse for seven days. Strain the mixture through a fine-mesh sieve, then warm the liquid gently over low heat and skim any foam that rises to the surface. Measure the resulting raspberry vinegar and add an equal volume of sugar. Stir until the sugar is completely dissolved. Allow the shrub to cool to room temperature before transferring to a bottle for storage.
