Ingredients

  • 1.25 oz
    Paul Beau VS Cognac

    or other VS Cognac

  • 0.75 oz
    Clear Creek Kirschwasser

    cherry eau de vie

  • 0.75 oz
    Lemon Juice
  • 0.5 oz
    Giffard Orgeat
  • 1 tsp
    Drillaud Elderflower Liqueur

    preferably Giffard Elderflower Liqueur

  • 0.5 tsp
    Luxardo Amaro Abano
  • 1 whole
    Egg White
  • 1 whole
    Lemon Twist

    grapefruit twist, expressed and discarded

Instructions

Combine all ingredients in a cocktail shaker without ice and dry shake vigorously to emulsify the egg white. Add ice and shake again until well-chilled. Strain into a chilled coupe. Express a grapefruit twist over the surface, then discard, and garnish with a fresh grapefruit twist.
