Vanilla Lactic Syrup

1:1 sugar to water ratio

1 wholeVanilla bean
split and scraped

2.5 gramsLactic Acid Solution

Instructions
Set an immersion circulator in a large water basin to 135°F. Combine all ingredients in a bowl and stir thoroughly. Transfer the mixture to a heat-safe sealable plastic bag. Seal almost completely, then submerge the bag (leaving the unsealed portion above water) to expel remaining air using water pressure. Finish sealing and remove from water. Once the bath reaches temperature, submerge the sealed bag and cook for 1 hour. Remove and shock in an ice bath until cooled to room temperature. Strain through a fine-mesh sieve, then pass through a paper coffee filter or Superbag if any particles remain. Transfer to a storage container and refrigerate for up to 4 weeks.
