Watermelon Rind Cordial

rind only, washed and cut into 2- to 4-inch pieces

Instructions
Wash and cut watermelon rinds into 2- to 4-inch pieces and place them in a Cambro or large sealable container. Pour the sugar over the rinds, seal the container, and refrigerate for 12 to 24 hours, allowing the sugar to draw out the rind's moisture through osmosis. After resting, stir to dissolve any remaining sugar crystals. Transfer the entire mixture to a blender and process until fully smooth and the sugar is completely dissolved, adding a small amount of water if needed to achieve the desired consistency. Pass the cordial through a fine-mesh strainer, discarding solids. Store refrigerated and use within 1 to 2 days. Do not batch with alcohol.
