Old Fashioned Glass

Ingredients

  • 4 spritz
    Herbsaint

    atomizer

    spritzed from an atomizer to coat the glass

  • 2 oz
    Sazerac Rye

    or similar rye whiskey

  • 0.25 oz

    2:1, Demerara sugar to water

  • 23 drops
    Peychaud's Bitters

    equivalent to approximately 3 dashes; use a medicine dropper for precision

  • 1 peel
    Lemon

    expressed

Instructions

Spritz the interior of a chilled double Old Fashioned glass four times with Herbsaint from an atomizer and set aside. Combine the rye, Demerara syrup, and Peychaud's bitters in a mixing glass filled with ice. Stir until well-chilled and properly diluted. Strain into the prepared Herbsaint-rinsed glass. Express a lemon peel over the surface and use it as garnish.
