1.5 oz

Makrut Lime Leaf, Lemongrass and Shiso Syrup

Kefir

Kefir whey
1 whole

Egg White
1 splash

Soda Water

Instructions

Combine all ingredients except the soda water in a cocktail shaker and dry shake vigorously without ice to emulsify the egg white. Add ice and shake again until well-chilled. Fine strain into a fizz glass. Top with a splash of soda water and garnish with a star anise pod.
