Ingredients

    Gin

    Martini & Rossi Riserva Speciale Bitter

    Martini Riserva Ambrato (amber vermouth)

  • 0.5 oz
    Fino
  • 0.5 oz

    Fresh green apple juice with vitamin C powder to prevent oxidation; see component recipe

    Made from leftover apple pulp; see component recipe

  • 0.5 oz
    Egg White

Instructions

Combine all ingredients in a cocktail shaker and dry shake vigorously without ice to emulsify the egg white. Add ice and shake again until well-chilled. Strain into a rocks glass over fresh ice.
